Are these cards setup to where if we par a hole and the square for that hole is for a bogey that we don’t get to count it? Or is it no worse than bogey and it counts in that case?

The scores for each hole are "at worst". If your card says you need a par and you make birdie, you clear the hole (and get to check off that box). Every card has six "golden holes", which means the hole is listed twice but with two different scores (for example, bogie and par or par and birdie). If you get the more difficult score you get to check off both boxes.
