The rules for the cook off part is simple. Cannot use pellet or propane smokers. Anything can be used as a smoker, so it doesn't have to be a trailer type. Check in on Friday and your meats cannot be seasoned before then, we will announce a time you can season your meats. Cooking starts at 3 am and you will have 12 hours to cook, you do not have to cook the full 12 hours. Meats are Briskets, chicken and ribs. Must also make 1 side or dessert prepared either in the smoker or on top. Judging will be around 4 pm to allow meat resting. Your will be judged on tenderness, smoke ring, flavor and side or dessert taste. Score from the judging will be deducted from the team round score acquired on the big course.
